Thank you very much! I was able to link to Swissgenetics and although not nearly as multilingual as you :) being Canadian, do speak and read French! It really is too bad though they don't mention if the bulls are tested for chondo or PHA! However I was able to find the status on the Australian site...

Nico you gave us a link to the Swiss site but unfortunately I don't read or speak German :( Where is the link about AI bulls on their site? A Swiss dairy farmer and friend was telling me about Dexters in Switzerland and I would love to have him look at it with me. Thanks, Liz

I have two very small, very milky, chondro free daughters from the Knotting (Saturn -Sarum Bullrush and Sarah of Knotting) x Woodmagic lines. (AI daughters of Riverhill Saturn's Galaxy) The 5 yr old is 40" (hip) and 11.6 kg milk (3rd lactation) and the two yr old is smaller but not yet mature ...

Hi Vickie, the problem with freezing milk is that it becomes 'destabilized' and the membrane around the fat globule is often ruptured. When this happens, the fat floats free in the milk and allows lipase to enter before you are ready. Fat is the conductor for lipase an enzyme that causes the flavou...

I measure ph only if there is 'something' different about the milk and I want to check the milk/udder health. Ph in cheesemaking is a little tricky for me because I don't standardize (can't) my milk so it is going to be different from time to time. Here Holstein is the 'standard' for cheese making ...

Hi Anna, usually when the cheese is getting runny like that it is because the proteolysis is happening too quickly. Using Thermophilic culture is what would normally help stabilize it. Yoghurt is thermo. Late lactation milk is also subject to excessive proteolysis. I changed the 'ingredients' to re...

Hi Anna, just wanted to report that the cheese tastes great!!! I just opened it today and liked it so much that I am going to share the recipe with the rest of the Canadian Association in the next newsletter (with full credits to you!) Here's a pic http://i430.photobucket.com/albums/qq26/ElidenFarm...

Eat it. It is meant to be a fresh cheese. I use it for cooking, lasagna, cannolloni etc and also make great cheesecake from it, both savory and sweet. Enjoy, Clive!

I agree Anna, turning milk into cheese is magic! That is exactly how I feel all the time; it fascinates me. The Ricotta /paneer recipe is also called queso blanco in Mexico! I think that if we look at all the cheeses in the world, with the slight exceptions of culture, temperature and handling of t...

Haha, I'm still using the one I got in Norway 34 years ago! And I don't think it is very commonly used because everyone 'looks' at it until I pick it up and show them the 'puzzle'! I find that molds, good molds, have been pretty predictable with my cheese. A blue mold, left to mature, will give tha...

Hi Anna, the dark on the left is a small wheel of cheddar that I allowed the natural molds to form, from blue to grey to brown and hard not mold spores any more. The white beside it is another wheel of cheddar that I aged near to some cheeses containing penicillium candidum, and it did the same but...

I feed my milkers organic alfalfa pellets mixed with the tiniest bit of organic grain, no soy. They love it and we get the benifit of 'grass fed' milk and cheese. Anna's right Clive, cheese is much simpler than one thinks. Although, frankly turning milk into cheese is still 'magic' for me. I bet if...

Yes Rebecca, you're right about numbers potentially affected. Here in Canada it is quite amazing how many pedigrees begin with Wheatear. PHA is now obviously a world wide problem but with the testing that is available, I am sure that we can erradicate it from our breed in the next generation or two...

Hi Carol, just in case there are Canadians, CDCA members, reading this, there are a couple of AI bulls, publicly available whose status hasn't been shared. But there is a list the rest and their results on our Association private chat site. Just wanted to clarify that Canadians should still request...
