Like Rob, we used to calve all year round. Now we're spring only. We still manage to spread things out a bit, and there's always the freezer. Maybe if you're changing, then best to go with your customers? i.e. do you have a boost at Christmas for example, if so, maybe autumn calving is best for you ...

Sorry, my kill and butcher prices should be £200 not £275, I'd included travelling twice. I can get it done for £110 locally, all in, but to be honest, the reason I pay £200 (and also travel 50 miles to get it done) is because it's to a really high standard of presentation as well as butchery.

...I've just seen an online advert for a mixed Dexter beef box priced at what works out at just £5.50 per kg. Limited stocks, thankfully, or we'd all be out of business. Why???????
