I intend to have my first dexter for the freezer August / September time .He will be under 30 months but over 24 months .
My plan was to have a free lance butcher to chop him up at home .
I've contacted the abbatoir and they are happy to hang him for three weeks but wont release it to me unless they remove the backbone .
My butcher is not referring to this particular slaughter house but says that others which he has come across literally hack it out and ruin the carcass .
My other option is that I can get a licensed butcher to take delivery of it for me and let me take delivery from them . I can't imagine me having much luck in this because obviously the butcher will be wanting a cut of the deal himself .
Is there anyway around my problem ?
As I've said before I have little choice in where I take the bull to be killed ! £100 to slaughter and hang !
