Short Rib / Jacob's Ladder

Searching around the internet yesterday I found a lot of tasty sounding US based recipes for short ribs which I believe we call Jacob's Ladder in the UK (according to the Eblex literature). This will use some of the brisket joints, but I am tempted to try it for something a bit different.

Has anyone else in the UK ever tried this, or sell it to your customers?

Yes of course. Its a trendy cut at the moment. we cut it in a quite narrow strip almost looks like osso bucco in a strip. but being honest its of pretty small size on the dexters. an alternative if you struggle with selling flank or sausage etc.
